Whey protein concentrates WPC. 85% protein.
were obtained from EURIAL Tours, France.. WPC
were obtained by ultrafiltration of casein serum. The
composition of the product is: Nx 6.38: 85%; fat: 3%;
mineral salts: 4%; water content: 4%; pH 6.5"0.2.
The proteins are soluble on all the range of pH, and
are good emulsifier at pH-7. Sunflower oil was pur-
chased from LESIEUR France.. Distilled water was
filtered using 0.2-mm filters.

Aqueous solutions of WPC 1.5% w.w.b were achieved
using an Ultra-Turrax and stored at 48C. The whey
proteins were analyzed by electrophoresis measure-
ments Desrumaux, Loisel, & Marcand, 2000.. The
proteins were b-lactoglobulin 68%, 18 600 Da., a-
lactalbulin 13%, 14 200 Da. and bovin serum albumin
BSA. 19%..
