What I am thinking now? I need to open 24hrs again for room service. What we can do with same manning? I will shear for your consider tomorrow. All things will not effect to another department.
Have you think to open 24hrs at coffee shop by room service back up?
This is just new my idea with f&b schedule arrangement.

What the ‘line of room service should be:
Room service number now set up at Boca. The new place for re set up the line should be at Eve.
Why?
- 6.00-12.00 we have enough staffs stand by for support breakfast including intern who have a well knowledgeable in F&B. During room service delivery food to guest room. Breakfast team can support with strong person. Suzanne Comment: K. Santi Boca should be considered as the main kitchen that prepares a la carte menu as per order for room service, so the line setting should be there as usuaul. As staffs at EVE breakfast have main focus on serving guests from the hotel and taking order, and clearing/setting table, so this might not able to support Room Service as per expected standard.
Next step
- We will have gab of manning at Boca. At Boca will be only one staff stand by after moved phone number to Eve. That is not expected from HOD desired. What is should be?
- After fill full manning in breakfast team. The breakfast manager should assigned one staff to support Boca as a clock road every day or time to time on requirement from Boca team. Suzanne Comment we agree up to a point, about sending supported staffs to BOCA after finish Breakfast / or as per request (could be manage in advance- Khun Pim will closely monitor and delegate staffs. - 14.00 – midnight. Time to start of Eve team. This period should handover by Eve dinner team. For afternoon the room service will be the one in Eve manning. Uniform should be according Eve concept. During peak period Eve team can also support when second order happened in same time. The traffic will not happen at all. Suzanne Comment :Please consider as standing by at BOCA will be better way as kitchen for Room service. This could also support BOCA team as room service team (afternoon shift) starts at 12 pm and finish at 9pm. Then night shift start at 9 pm they could handle their tasks at 7th floor.
Midnight – 5.00am.
- This period for the room service should closed and handover by FO team.
Why?
- As checked by time to time. The room service order not much during this period someday zero.
- If HOD agree to closed room service during this period. What pre planning should do?

We might figure why there is not many order? As your are assigned in this department please review why the order is low and how we can improve this? Please make your suggestions rather than assume that we will never get orders. What about on weekends or for late night arrival guests? Early departure guests?
^ Multi skill training In F&B should provide by HR department to FO team before kickoff closed. This is very important and strongly focuses. All multi skill in F&B should pass test by Suzanne Comment: K. Santi please prepare the multi-skill training program based on what specific tasks and training other departments need in order to help room service. Please prepare the document to pass to HR.
What the kitchen should do?
^ Night food menu should limited of sale item. (2 or 3 enough)
What F&B should do?
^ Night drink menu should limited of sale item. (Bottle only for sale such as soft drink, beers)
For protect guest complain
- Duty manager and FO team will automatic informed when arrival guest. After these complains are received, from now onwards we will pass back to K. Santi to assist to #1 investigate and report and inform to FO team full incident report and from there FO can keep track and to communicate to the hotel guest. For this it is very important and urgent that K. SAnti replies immediately to not loose time or momentum to fix the problem with hotel guests.
