Analysis of the results showed incorrect identification of GHPs
as part of HACCP system in the case of 85% of surveyed food businesses.
GMPs (Good Manufacturing Practices) belongs to PRPs for
HACCP and is a basis of any effective food safety program. GHPs is
one part of this (Blanchfield, 2005; Mortimore & Wallace, 2013).
The Recommended International Code of Practice General Principles
of Food Hygiene indicated that prior to HACCP system implementation
it is necessary to have in place prerequisite programs
such as GMPs and GHPs. The limited number of legal acts detailing
GMPs/GHPs requirements and documented operational procedures,
as well as exhaustively discussed aspects of GHPs in the
literature often resulted in confusing the concept of GMPs/GHPs
with HACCP (Dzwolak, 2014)
