The improvement in extraction
yield was not caused by an increase in temperature, thus,
another mechanism, most likely electroporation, is involved.
This finding could be significant for the extraction
of heat labile components, or the extraction of fat
soluble components at low temperatures. This study
shows that the effect of ohmic heating in terms of enhancing
extraction yields extends to oils (fat soluble
components) in a similar manner to water soluble
components such as beet dye and apple juice.
