Chef Amporn, K. Wongsatit, K. Ratthakrai and K. Ratchawat,
Effective immediately, Chef Felix will be producing desserts for you until we can find a qualified Salad/Dessert cook for you team.
We will need to change presentations on a couple of items so please work together with Chef Felix on these issues A.S.A.P.
We will get the items into the Material Control system so you can request via transfer just like all other items your order from the Bakery.
Chef Felix and Tum, ensure recipes include all garnitures so nothing is forgotten and full cost transfer credits are accurate.
ATTENTION ALL IN THIS EMAIL:
· Set order par levels.
· Must turn stocks every 3 days.
· Any item older than 3 days needs to evaluated by Chef Felix for freshness and/or removal from sales inventory.
· Any items not fit for sale, Chef Amporn will write a spoilage report to balance inventory.
· Put one person in charge to check stocks for ordering.
· Ensure cooks picking up orders DO NOT DELAY FOR ANY REASON.
· I want Spoilage Reports written every day any of these desserts are spoiled with a photo and detailed reason why. Nothing is thrown away without Chef Felix seeing the item first. K. Ratchawat, brief your service team as well!
· Items Sold must balance with items ordered from Bakery.
· K. Ratchawat, please provide me with a Desserts Sales Report every Monday, for the previous 6 days. Email to me, Chef Felix and cc: K. Pui at fbadmin@kirimaya.com
