3.4. Effect of vacuum pulse and osmotic solution on the final NaCl content
The NaCl content of the tomato slices after 240 min of osmotic treatment is shown in Fig. 4. Tukey's test at 5% significance was employed to analyze the differences among the treatments. The maltodextrin-NaCl solution results in a lower incorporation of NaCl with (PVOD) or without (OD) vacuum pulse application. Ferrari, Arballo, Mascheroni, and Hubinger (2011b) studied the osmotic dehydration of melon with maltodextrin-calcium lactate and sucrose-calcium lactate solutions. They also observed a lower salt incorporation with maltodextrin. The protective effect on the preservation of the cell structure of maltodextrin makes solid incorporation difficult. Regarding PVOD, it usually results in a higher solid uptake; however, in this study, a lower solid uptake was observed upon NaCl incorporation.
