The use of edible films and coatings as carriers of antimicrobials is an emerging technology with a high potential to complement the current preservation procedures employed by the food industry in order to increase both food safety and the microbial quality of different food commodities including fresh, ready-to-eat or processed alimentary systems.
Edible films and coatings control the release of the incorporated antimicrobial thus maintaining effective doses of the additive along the storage period.
