The heights of the control and 25% PD-SC samples were significantly
greater than those of the muffins that contained more than
50% PD-SC. The decrease in the number of diffusion pathways and
air cells could be associated with a decrease in muffin height
(Table 3) for levels of sucrose replacement higher than 25%.
Hicsasmaz et al. (2003) found that the population of small cells
increased, crack-like cells diminished and sphere-like cells
increased with an increase in sucrose replacement by polydextrose
in a cake system. This change in the shape and size of the air cells
was also associated with height loss.
