Treatments were prepared with a 50% replacement level of NaCl
with KCl. The NaCl concentration was reduced from 2.5 to 1.25%.
For the treatments with a replacement of NaCl with KCl, the amino
acid, lysine, and flavor enhancer, Ajitide® I+G (50% disodium inosinate
and 50% disodium guanylate), were added to the formulation
as described in Table 1. Lysine was added at a concentration of 1%,
and the flavor enhancer was added at a concentration of 600 mg/kg.
Lysine and the flavor enhancer were provided by Ajinomoto Interamericana
Indústria and Comércio Ltda (São Paulo, Brazil). Two independent
replicates of each treatment were made.
