2.1. Prebiotic
Fructooligosaccharide (FOS) consists predominantly of polydisperse
b (2 / 1) linked fructans produced by partial enzymatic
hydrolysis of chicory inulin [17]. The degree of polymerization of
the fructans in FOS (Raftilose P95) ranges from 2% to 8% [7].
