The evolution of the lactic acid microflora in Skimmed
Set Yoghurt (Fig. 2) showed that at 6C the streptococci
were capable to remain viable and even to reproduce,
and their count increased slightly from their initial level
(109 CFU gÿ1
). However, at 12C the initial cell counts
remained the same for approximately 40 days and then
they decreased sharply, reaching 5105 CFU gÿ1 at the
end of the refrigerated storage.
