A fast, repeatable and reliable method for kefiran production by Lactobacillus delbrueckii subsp
bulgaricus, Lactobacillus delbrueckii subsp lactis, Entrococcus facium, lactococcus lactis, acetic acid bacteria and yeast was established, in which the effects of heat, carbohydrate and nitrogen sources on cell growth, exopolysaccharide formation and substrate assimilation were considered.
