The effect of pH value on the growth of mung bean sprouts was
evaluated with total length and the results were showed in the
Fig. 2. The growth differences of mung bean sprouts were not
obvious among the treatments at the early stage. However, with the
prolonging of time, pH 4.14 and pH 6.34 treatments showed faster
growth than the tap water treatment. Meanwhile it was found that
the alkaline electrolyzed water showed slower growth than the tap
water treatment and pH 2.16 treatment showed stunted growth at
the later stage.
