Prickly pear
is mainly consumed as fresh fruit, but it is a promising
product for the development of functional products, due
to the high content of minerals, amino acids, soluble
fibre, and antioxidant compounds in pulp and peel
(Dıaz-Medina et al. 2007; Al-Juhaimi and €Ozcan 2013;
Jimenez-Aguilar et al. 2015).
