Another common method for preparing rice protein was alkaline extraction. Broken rice was mixed with 0.1% NaOH solution, stirred at room temperature for 1 h, and then left overnight. The mixture was centrifuged at 8000 g for 10 min. The supernatant was adjusted to pH 4.8 to precipitate rice protein and centrifuged at 8000 g for 20 min. Subsequently, rice protein prepared by alkaline extraction (AE-RP) was recovered by dispersing the protein precipitate in distilled water (1:10, w/v), neutralizing to pH 7.0, and freeze-drying.
