2.1. Materials and reagents
Fresh cultivated mushroom A. bisporus was harvested from the Dengyue Lake region
of Yangzhou (Jiangsu, China). This mushroom strain was identified as A. bisporus
As2796 by Prof. Z. Wang of Fujian Mushroom Research and Development Station
(Fujian, China). The harvested mushroom was expediently transferred to the laboratory
and washed thoroughly with distilled water. In order to inhibit tyrosinase activity,
mushroom was cut into small pieces, immediately frozen in liquid nitrogen, lyophilized,
finely milled to powder (200 mesh) and stored at 20 C prior to extraction.
