5. Human resource management practices
As illustrated by Welch and McCleary’s (1992) Findings, research into human
resources in hospitality related journals is one of the popular areas of research. In
particular, ¹he Cornell Hotel and Restaurant Administration Quarterly and, to a lesser
extent, ¹he International Journal of Hospitality Management have published a wide
range of HR research. The literature covers most of the topics researched in mainstream
HR, with some topics obviously more appropriate to the industry than others.
For example, while there has been a considerable amount of discussion in the HR
literature concerning alternative pay schemes for employees, this topic receives little
attention in the hospitality HR research, apart from overviews of pay systems in texts
such as Riley (1991). However, the practice of tipping has received some attention
(Lynn and Graves, 1996) as have illicit rewards in the form of fiddles and knock offs.
Both Wood (1992) and Lucas (1995) provide good reviews of the literature.
