cocoa powder is widely used in production of chocolate milk, but a ready-to-drink cocoa beverage has also been produced. The product, which does not appear to have been widely distributed, was based on cocoa powder dried whey powder, skim milk powder and vegetable oil. Processing was by ultra-heat-treatment and the beverage was shelf stable. Despite the presence of xanthan gum and carrageenan as stabilizers considerable sedimentation occurred during storage.
