At the beginning of the test the viable Pseudomonas spp. concentration, which is part of the microflora of the investigated product was 4.17 log cfu/g. Figure 3 shows the viable count of Pseudomonas spp. for all the investigated samples. As can be inferred from the figure, the Cnt sample shows a slight increase during the entire observation period, whereas the use of coating did not seem to inhibit the growth of this microbial group because a period of stability, followed by a steady increase in the load cell, can be observed.
