A grilled chicken club sandwich is a great item to eat for lunch or dinner. Also known as a “triple decker”, a club sandwich usually contains three slices of bread.
When a club sandwich is served at a restaurant, more often than not, the sandwich is cut into quarters. Large frilled sandwich toothpicks are frequently used to hold the sandwich quarters in place.
French fried potatoes and cole slaw are excellent side dishes for a grilled chicken club sandwich.
To make one grilled chicken club sandwich, you will need:
1 grilled/fully cooked chicken breast
3 cooked slices of bacon
3 slices of bread
A few leaves of lettuce
3 slices of tomato
1 or 2 slices of cheese, optional
1-2 tablespoons of mayonnaise (honey-mustard is another tasty option)
4 large frilled sandwich toothpicks
**Other ingredient options include roasted peppers, raw or caramelized onions, sauteed mushrooms and sliced avocado.
The bread used in club sandwiches is usually toasted. Start by toasting the slices of bread. When the slices are toasted, spread some mayonnaise on one side of each slice. The mayonnaise is not only used for flavor in club sandwiches, it also acts a glue of sorts, holding the various ingredients onto the bread.
Place the lettuce leaves on one of the slices of bread. This slice of bread will be the bottom slice of the club sandwich. The mayonnaise on the bread helps to hold the lettuce in place.
Lay the tomato slices on top of the lettuce leaves. Next, place the slices of cooked bacon on top of the tomato slices.
Place another slice of bread mayonnaise-side up, on top of the assembled bacon, lettuce and tomato. It’s okay to gently press down on the corners of the assembled BLT, to help keep it together. This is the base of the sandwich.
The cooked chicken should be placed on top of the second slice of bread. The mayonnaise helps to anchor the chicken breast.
If you want cheese on your sandwich, lay the slices on top of the chicken.
The third slice of bread should be placed on top of the chicken breast, mayonnaise-side down.
Once the top slice of bread is in place, it is time to cut the sandwich into an “X” pattern.
Holding the sandwich with one hand, place the large toothpicks into the top slice of bread, going all of the way through the sandwich, to the bottom.
With one hand, hold the sandwich in place with your bent fingers on the corners. With the other hand holding a sharp knife, place the tip of the knife on one corner of the sandwich, pointing down.
Gently cut through the sandwich diagonally with the knife blade pointing downward. The sandwich can fall apart easily, so keep your fingers on top.
Turn the sandwich a half turn and place the knife tip on the opposite corner and cut that side diagonally, creating an “x” pattern. At that point, the sandwich will be cut into quarters. Enjoy!
