employed, it was adequate to obtain an understanding of the
probable effects on the organoleptic acceptability of the
milk. Subjective evaluation of milk samples from cows fed
the two diets for organoleptic acceptability by experts confirmed
that there was no adverse affect of feeding fenugreek
seeds. Since flavour-altering compounds in the diet can
undergo transformation by microbial or host enzymes it was
necessary that samples be evaluated immediately following
provision of fenugreek seeds in the diet. By conducting
these organoleptic evaluations following dietary inclusion
of fenugreek seeds, it was possible to assess whether milk
flavour responded to a progressive degradation or accumulation
of the flavour-altering compounds in the feed. The
panel evaluated each raw milk sample (n = 80) for taste,
colour, and aroma, and found all but one sample to be normal.
Only one sample from an a.m. milking, from a cow
receiving the F-TMR was slightly oxidized (no statistical
test was applied to the data).
