The genus Weissella, formerly classified as the genera Leuconostoc
and Lactobacillus, is found in a variety of meat products,
including fresh and vacuum packaged meats and poultry, as well as
processed and fermented meat products (Holzapfel, 1998;
Holzapfel & Schillinger, 1992; Reuter, 1975; Von Holy & Holzapfel,
1989).
