Based on their good functional properties and nutritive value,
fish protein hydrolysates are potential ingredients able to replace or
complement fish-meal-based diets in aquaculture diets. Indeed, they
have been so far used in aquaculture feeds as protein supplement,
attractants or palatability enhancers (Aguila et al., 2007; Hardy, 1991).
Enzymatic hydrolysis of fish materials is usually carried out under
mild conditions, giving rise to final products of high functionality,
good organoleptic properties and excellent nutritional value without
formation of toxic compounds (Kristinsson and Rasco, 2000).
