This can be attributed to the chemical structure of
xanthan molecules having negatively charged carboxyl
groups on the side chains, leading to the increase of
repulsive forces and expansion of the matrix, resulting
in higher water absolrption capacity. Secondly, GAXA
spheres exhibit a lower uptake of water when
compared with the XA type. This is because of the
diffusion restriction:; and reduction of the swelling
ability caused by the GA cross-linking.
