Grape seed extract, usually obtained by solid–liquid extraction with different solvents from defatted seeds, has a characteristic flav- anol profile [2] and an exceptional total polyphenol content, which may reach up to 13.8% on a dry weight basis [3]. These compounds have been of great interest to the food and pharmaceutical industry due to their benefits as anti-aging, anti-inflammation [4], anti-car- cinogenic [5], anti-mutagenic [6], anti-ulcer properties and as they are associated with reduced risk of cardiovascular disease
