Rice paddy samples were obtained from the Rice Department of Thailand, Ministry of Agriculture and Cooperatives. They were har- vested on November 2010. The samples included Sanpatong 1 e SPT (glutinous, low amylose, indica), Khao Dawk Mali 105 e KML (long grain, medium amylose, non-glutinous, indica) and Chainat 1 e CHN (long grain, high amylose, non-glutinous, indica). The rice paddies were aged by storing at room temperature and 73 2% relative humidity in a tightly closed black plastic chamber for one month and one year before milling. Prior to use, they were milled to separate husk from brown rice. The brown rice grains were polished and white rice kernels were collected. Samples were examined in triplicate.
