Each volunteer participated in the tests for all of the beverages,
acting, therefore, as his or her own control. An interval of a week
was left between the tests for each beverage. The beverages were
Pilsen-type beer, red wine (Cabernet Sauvignon), Scotch whisky
and cachaça. The same dose of ethanol (0.5 g/kg body weight)
was given in the form of the chosen beverages. The first venous
blood sample (at time 0 h) from each volunteer (about 8 ml) was
obtained after an overnight fast of 12 h. The volunteers were given
no longer than half an hour to ingest the drink, and then the second
sample was obtained (at time 0.5 h). The remaining blood samples
were collected over a period of 6 h (at time 1 h, time 2 h, time 3 h,
time 4 h, time 5 h and time 6 h). At 2 and 4 h after the initial blood
sample was collected, the volunteers consumed snacks with
energy values of 366 kcal. The blood samples were transferred to
tubes containing the anticoagulant EDTA. The plasma was separated by centrifugation immediately after collected (1500g for
15 min), divided into Eppendorf tubes and frozen at 20 C until
the analysis was carried out.
