On the other hand, the high accumulation of the lactosucrose
without significant decrease and the low accumulation of levan
in the maple syrup 30◦Bx-based reaction system (9.89% at 48 h)
reveal that (a) the formation of lactosucrose was more favored
in the presence of high sucrose concentration and (b) the binding
affinity of lactosucrose as an acceptor was low in maple syrup 30◦Bx highly rich in other components. The results (Fig. 3) also indicate
that higher concentration of lactose-2fructose (2.23 g/L) was
accumulated in the maple syrup 30◦Bx-based reaction system upon
48 h. Minor FOSs, such as nystose and fructosyl-nystose, together
withsomeother unidentified tetra- and pentasaccharides were also
observed over the reaction time course at very low extents.
