The highest inhibition in percentage
was observed for the AC-1 strain in the first 8 h of incubation.
The B-7 strain suffered the most inhibition at 24 h. In agreement
with the findings of Vinderola and Reinheimer (2003), these
results demonstrated that bile salt was less inhibitory to
bifidobacteria than lactobacilli.The resistance against bile salts
to adhere in the intestine wall is another important selection
criterion for probiotic microorganisms (Fioramonti et al., 2003).
