The purposes of this study were to develop Dessert recipes as accepted by consumers. To increase the nutritional value from the Purple Sweet Potato.A sample of the basic recipe for the trial. It was found that Daifuku dessert recipe has been more accepted.There were ingredients such as Glutinous rice flour 360 gram,Granulated sugar 120 gram,Water 420.So this Daifuku dessert recip got accepted most.According from the study of Daifuku dessert recipe that used 0 10 20 and 30 percents for Sweet potato starch substitute Glutinous rice flour.(The quantity of Glutinous rice flour).
The findings indicated that 20 percent of Daifuku that made from Sweet potato starch will have a beautiful color,good taste and soft. So I recommended to used Sweet potato starch substitute Glutinous rice flour in Daifuku dessert recipe making that accepted most.
