Results and Discussion
Shear Force Values. Shear force values of Kaua‘i ribeye steaks ranged from 2.8 kg to 11.0 kg across the
35 samples tested, with a mean of 4.4 kg and standard error of 0.26 kg (Figure 4, Table 1, Table 2). The standard
error is a measure of variability among samples. The coefficient of variation (CV) allows for comparison of
variability among data sets where a higher CV indicates greater variation among samples. The mean shear
