In conclusion, the optimal condition of retaining AA-2G with highest stability was determined to be 55.3 °C and pH 6.4. RSM regression model successfully reduced the number of experiment and concluded the optimal condition of maintaining AA-2G. Based on the results of antioxidative activity evaluation, AA-2G showed good ABTS free radical scavenging activity and reducing ability. On the other hand, AA-2G had marginal DPPH radical scavenge activity and metal chelating activity. Although the antioxidative activity of AA-2G was less effective than that of using ascorbic acid, AA-2G was still a good ascorbic acid derivative to be used in cosmetic lotion as the active ingredient. Results of stability and antioxidative activity studies could benefit cosmetic lotion manufacturers to provide cosmetic lotion related products with better bio-functionalities.
