After freezing and thawing, the plaa-som mixture underwent a
strong LAB fermentation that was characterized by a shift in the
ecology of the species involved. From samples 4 to 9, a three-step
succession of LAB was observed. First, the predominance of the
heterofermentative species W. cibaria gave way to a co-predominance
of the heterofermentative species W. cibaria, and Lb. plantarum, and
the homofermentative species, P. pentosaceus. This finally gave way to
Lb. plantarum as the predominant species.
