The influence of protein concentration on the flow behavior
(shear stress versus shear rate) of homogenized MWP suspensions
was measured at pH 6 (Fig. 3a). Similar trends were also obtained
for the non-homogenized systems (data not shown). The rheological
data showed that the shear stress increased approximately linearly
with increasing shear rate at all protein particle concentrations for
the non-heated samples, and therefore they could be considered to
act as ideal fluids Newtonian behavior. The apparent viscosity of
the samples increased with increasing protein particle concentration
(Fig. 3b), as would be expected for a colloidal suspension. At lower
