In various studies about the correlation
between sensory scores and TBARS values, correlation
coefficients from 0.50 to 0.99 were found. Tarladgis et
al. (1960) found significant correlation with r=0.89 and
determined that the rancid aroma threshold was detected
between TBA values from 0.5 to 1.0 mg MA/kg
sample. Greene and Cumuze (1982) also observed significant
correlations between sensory panel scores, but
the r values were low, due to the inconsistent TBA
values found. Not all researchers have found statistically
significant correlations between sensory scores and
TBARS values. Variability amongst values in the literature
may be due to different methods used to calculate
the r values (pooled within groups, across groups,
means values only) and to the number of factors
involved (Stoick et al., 1991).
