The initial sample was unaged Pedro Ximenez wine from the
2008 vintage of Bodegas Moreno, S.A. (Córdoba, Spain). The sample
was split into 30 sub-samples that were stored in air-tight stoppered
100 mL glass flasks. One half of the flasks were supplied with
a 2 g/L concentration of medium toast American oak chips. All
flasks were placed in a stove at 65 C and withdrawn for sampling
after 10, 20 and 30 days.
