Carotenoids, an important group of nutrients, have been reported to possess a great many health-benefiting functions, especially the antioxidant activity (Granado-Lorencio et al. 2007). Consequently, the presence of a high level of carotenoids in bee pollen would effectively prevent the lipid from oxidation and maintain its nutritional value. Total carotenoid content in fresh lotus bee pollen (514.7 mg/kg) was confirmed to be particularly high if compared with common vegetables, fruits, berries or other edible food (Lin et al. 2005; Scala and Crapiste 2008; Xu et al. 2008). Besides, carotenoids imparted orange to red visual color to bee pollen, which is a vital factor of food quality. From these perspectives, the content of carotenoids is an appropriate criterion and obvious marker to assess the quality or freshness of bee pollen.
Figure 4 clearly depicted that the loss of the total carotenoid content in bee pollen at various levels occurred at different temperatures during the 3 months of period storage. At 4C, the content of carotenoids underwent the relatively small reduction by comparison with the other two higher temperatures. The majority of these compounds still existed in the samples subjected to the 4C storage test. The concentration of carotenoids gradually decreased at 20C within the storage. It diminished by 46.6% (from 514.7 ± 21.5 to 275.0 ± 14.0 mg/kg bee pollen) when the storage time prolonged from 0 to 45 days. At the end of the storage period of 3 months, the percentage of loss in the concentration reached about 56.6%. As temperature increased to 40C, the significant drop (P < 0.05) in the concentration of the carotenoids in the samples was observed. The massive consumption of antioxidants like carotenoids in bee pollen appeared to reflect the degree of lipid oxidation within the evaluated storage time. By the end of storage, carotenoids were almost exhausted (Fig. 4).
