Preparation of sodium caseinate and gum tragacanth stock
dispersions
Gum tragacanth dispersions were prepared by adding the
known amounts of biopolymer powders in distilled water under
gentle stirring at room temperature for 2 h and the aqueous solutions
of sodium caseinate of known amounts of biopolymer
powders were prepared by dissolving sodium caseinate in distilled
water at room temperature for 2 h then both samples were maintained
at 4 C overnight to ensure the complete hydration of the
macromolecules.
