In this work we present a novel extract that was obtained through Sc-CO2 extraction of garden sage, followed by hot water extraction.
The resulting extract is rich in RA and mild in flavor.and demonstrated antioxidant activity in an oil-water emulsion system.
Its flavor was judged to be acceptable by a sensory panel.
This combination of attributes make the particular extract an ideal candidate as a functional ingredient
