In this study, anthocyanin and antioxidant activities by various
assays including reducing power, free radical scavenging by DPPH
from various colors of mulberry fruit extract from the species M.
alba have been evaluated. In addition, mulberry fruit extracts are
also determined for their mushroom anti-tyrosinase activity since
antioxidants with whitening effect can be potentially used in dermatological
aspects. The effects of heat and light on anthocyanin
and antioxidant property are also investigated.
