2.3. Freezing method
The cryomechanical freezing was conducted by two IQF freezing
methods. The cryogenic freezing was conducted at 86 C in Cryotest
Chamber (Air Products; 1000 kg/h) by exposing samples to
liquid N2 vapour supplied by a liquid N2 tank, for 1 min and then
followed by air blast freezing at 30 C and 6 m/s air velocity. Next
samples were transferred to storage (at 30 C) until core
temperature reached 20 C. Forty shrimps per batch were frozen
for each treatment.
