1.What is your cocktails style? or cocktails that reflects your character?
personally I don't have a style. I observe my customer as close as I can. I believe they are my biggest inspiration. I work on cocktail recipes, buy putting my 25% on it, the rest 75%, comes from their reaction on my:
- preparation/technique/presentation
I try to put in 1 glass: purity/freshness/ and simplicity, in a way which the customer can't do it in their homes!!!!
2.Charm of rum - What is rum outstanding character?
Rums are great ingredients for drinks, aged or older rums are the best for distinctive characters. Thinking on Bacardi 8, it's a phenomenal rum to work with it. He's unique orange, coconut and chocolate notes, will definitely make a unique test to the drinks.
3.How rum affect the taste of cocktails
Rum can associate as the sweet spirits. Sugar cane has he's own taste. Aged rums tends to bring, sweet notes like: orange/coconut/marzipan/chocolate. white/ un aged rum are more on the fresh/citrus/ taste to the drinks.
