The release of carotenoids in 95% ethanol (Fig. 3) showed that all
the films released carotenoids, suggesting their usefulness as
carotenoid release systems in fatty foods. The film that released the
highest amount of carotenoids at the beginning of storage was the
S_E one (z350 mg astaxanthin/g film), followed by the BeC
(z300 mg b-carotene/g film) and the T_E (z100 mg lycopene/g film)
