citral in such an emulsion system under these conditions remains to be
evaluated before it can be considered as a potential carrier for intestinal
delivery of citral, and other applications in food formulation. Therefore,
the objective of the current study was to evaluate the stability of citral in
a SPPMP-stabilized emulsion system under challenge conditions,
including prolonged storage, heating and simulated gastrointestinal
digestion.
