A potential concern for the addition of sodium chloride to apple
slices arises from potential adverse health effects of excess consumption
of sodium. Similar to other countries, the USA national
guidelines recommend the intake of sodium by the general population
to be less than 2300 mg/day (USDA, 2010). Li et al. (2014)
measured the uptake of solution during dipping of apple slices
and calculated that a 0.1 mol/l NaCl dip would result in an increase
in sodium of 35 mg kg1 apple. Therefore, consumption of 100 g of
apple slices would provide only 0.15% of the recommended daily
sodium intake and would not have a material impact on overall
sodium intake.
