The ability of wheatgrass extracts to scavenge hydrogen
peroxide was determined by the method of Rosen and
Rauckman[21]. About 1 mL of various wheatgrass extracts
(ranging from 0.2 to 1.0 mg/mL) was dissolved in 3.4 mL of 0.1
mol/L phosphate buffer (pH 7.4) and mixed with 600 µL of 43
mmol/L solution of hydrogen peroxide.
