mushroom tyrosinase activity at least 15 times stronger than regular
concentration (1–4% w/v) of kojic acid used as whitening
agent.
Tyrosinase is a copper-containing monooxygenase (Yu, Hung,
Weng, Su, & Wang, 2006). Cu+2 reducing power of mulberry fruit
extract was monitored by the maximum absorbance of the red
complex of Cu+1 and bathocuprinedisulfonic acid at a wavelength
of 483 nm. As shown in Table 2, more Cu+2 reducing power exhibited
in purple-colored mulberry fruit extract. Stronger Cu+2 reducing
power in purple-colored mulberry fruit extract may imply that
it exhibited a higher anti-tyrosinase activity which is similar to the
results in Fig. 3.
