POT AND PAN WASHING
It is important to scrape off all excess soil from pots and pans so as not to load the sinks with soil.
Place the scraped items into the wash solution as promptly as possible for two reasons:
• So that soils do not dry, and
• So that items have the maximum time for soaking. The longer the soak, the easier and faster the items can be cleaned.

The following is the recommended procedure for a three tank set-up:
Wash (Sink #1)
1. In sink # 1, prepare a hot solution of a designated cleaner: Follow label instructions).
2. Allow soiled items to soak for at least five minutes. The longer the better.
3. Rub all inside and outside surfaces with a brush or abrasive pad.
Rinse (Sink #2)
1. Fill sink with clear hot water.
2. Remove items from wash sink, allowing wash solution to drain back into the wash sink. Completely submerge utensil in rinse sink (#2)
