From Table 1, it was found that at different temperatures of solvent extraction, concentration and hence mean peak area of delphinidin-3-glucoside was always significantly higher than that of delphinidin-3-rutinoside (p ¼ 0.0133).
Therefore, it can be concluded that the eggplant peel color extracted by modified solvent extraction procedure was richer in delphinidin-3-glucoside which could have possibly accounted for the reddish appearance of the extracts.
However, the color extracted by SC-CO2 was richer in delphinidin-3-rutinoside contributing to the nature-identical peel color of the extract.
