Blaszczak et al. (2003) reported that the external part of starch
granule differed significantly from its interior part in term of
uniformity, and was likely to be composed mainly of amylopectin
cluster with a wide range of high molecular weight. Blaszczak,
Valverde, & Fornal (2005) suggested that the outer part of starch
granule had a very dense layer which enhanced the resistance to
external physical affections. Therefore, after PEF treatment, the
fragments as well as the inner part of the starch granule, which had
lost the protection of envelope, could absorb water more effectively
and swell more easily, which result in the increase of aggregation
among particles.
